Peaches can be red, pink, yellow, white, or a combination of those colors. On our farm we have peaches that are melting, non melting , acidic, non acidic, white flesh, yellow flesh, red flesh, clingstone, freestone and doughnut shaped. In fact around 100 varieties all with different flavours/characteristics
Selecting your Peach
Firmness & juiciness:
With the large range of varieties it is becoming difficult to tell just when peaches are ready to eat, some need to be eaten soft, some firm like clingstone peaches and some need to be eaten crunchy. Now we have some incredible varieties of yellow peaches that have firm flesh and are crunchy to eat these also have exceptional flavour.
Color & Selection:
While the red blush of a peach is beautiful, it doesn't tell whether the fruit is ripe. Instead, look for a uniform yellow background color, (golden yellow on yellow peaches, creamy yellow on white peaches) with no green around the stem.

Peaches
Peaches are believed to be native to China. They are cultivated throughout warm temperate and subtropical regions of the world. In the peach fruit, the stone is covered with a fleshy substance that is juicy, melting, and of fine flavor when matured and mellowed.
